Cross Flow Micro-filtration is high in protein and calcium but low in fat, sugar and lactose. This is due to the manufacturing process. Cross Flow Micro-filtration is a natural way of extracting fat, lactose and other unwanted materials using high tech ceramic micro filters, unlike ion exchange which uses chemicals such as hydrochloric acid and sodium hydroxide. This low temperature micro-filtration technique allows for an end product which is very high in protein contents (90>), the retention of important subfractions and virtually undenatured protein.
